# What You Need:

→ Shrimp & Marinade

01 - 1½ pounds large shrimp, peeled and deveined
02 - 2 tablespoons olive oil
03 - 2 garlic cloves, minced
04 - ½ teaspoon kosher salt
05 - ¼ teaspoon black pepper
06 - 1 lemon, zested

→ Piccata Sauce

07 - 3 tablespoons unsalted butter
08 - 2 tablespoons olive oil
09 - 2 tablespoons capers, drained and rinsed
10 - ¼ cup dry white wine
11 - 2 tablespoons fresh lemon juice
12 - 2 tablespoons chopped fresh parsley

→ For Serving

13 - Lemon wedges
14 - Extra chopped parsley

# How To Make It:

01 - In a bowl, toss shrimp with olive oil, minced garlic, salt, pepper, and lemon zest. Let marinate for 10 minutes while preheating the grill to medium-high heat or preparing a grill pan.
02 - Thread the marinated shrimp onto skewers, reserving any remaining marinade in the bowl.
03 - In a small saucepan over medium heat, melt butter with olive oil. Add capers and cook for 1 minute. Pour in white wine and lemon juice; simmer for 2 minutes until slightly reduced. Stir in parsley and remove from heat.
04 - Grill shrimp skewers for 2-3 minutes per side until opaque and lightly charred. During the final minute of grilling, brush shrimp with a portion of the piccata sauce.
05 - Transfer skewers to a serving platter. Drizzle with remaining piccata sauce and sprinkle with additional chopped parsley. Serve immediately with lemon wedges on the side.

# Expert Tips:

01 -
  • The piccata sauce transforms simple grilled shrimp into something that tastes straight from a high-end Italian restaurant
  • Everything comes together in under 30 minutes but looks impressive enough for entertaining
  • The bright, zesty flavors hit all the right notes for warm weather dining
02 -
  • Dont skip the lemon zest in the marinade since it builds layers of citrus flavor that you cant get from juice alone
  • The sauce needs to simmer just long enough to reduce slightly but not so long that the butter separates
  • Brush the sauce on during the last minute only, otherwise the sugars can burn on the grill
03 -
  • Pat the shrimp completely dry before marinating so the oil and seasonings cling instead of sliding off
  • Room temperature shrimp grill more evenly, so let them sit out for 15 minutes before cooking
