# What You Need:

→ Vegetables

01 - 3 medium zucchinis, sliced into 1/2-inch rounds
02 - 1 red bell pepper, cut into 1-inch pieces (optional)
03 - 1 small red onion, cut into 1-inch chunks (optional)

→ Garlic Butter

04 - 4 tablespoons unsalted butter
05 - 3 garlic cloves, minced
06 - 2 tablespoons fresh parsley, chopped
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper
09 - 1/2 teaspoon grated lemon zest

→ For Skewers & Garnish

10 - 8 wooden or metal skewers
11 - Lemon wedges, for serving

# How To Make It:

01 - If using wooden skewers, submerge them in water for at least 20 minutes to prevent burning during grilling.
02 - Heat grill to medium-high, approximately 400°F.
03 - Melt butter in a small saucepan over low heat. Add minced garlic and cook briefly, about 1 minute, until aromatic. Remove from heat and mix in chopped parsley, lemon zest, salt, and black pepper.
04 - Alternate zucchini slices, bell pepper, and red onion pieces on prepared skewers.
05 - Generously coat assembled skewers with half the garlic butter mixture.
06 - Place skewers on preheated grill. Cook 3 to 5 minutes per side, rotating occasionally, until vegetables are tender and lightly charred.
07 - Transfer skewers to a serving dish and immediately brush with the remaining garlic butter. Garnish with lemon wedges and serve warm.

# Expert Tips:

01 -
  • The rich garlic butter soaks into every bite, transforming humble vegetables into something special.
  • It is the easiest way I know to make everyone—veggie lover or not—come back for seconds at a cookout.
02 -
  • If you skip soaking wooden skewers, they will burn, not toast—lesson learned after one too many charred sticks.
  • Finishing with fresh garlic butter after grilling keeps the flavor vivid and lively.
03 -
  • If the garlic starts to brown, pull the pan off heat fast; burnt garlic goes bitter quickly.
  • Let the skewers rest for a minute before serving so the juices settle and flavors deepen.
