# What You Need:

→ Chocolate Cookies

01 - 2 cups all-purpose flour
02 - 1/2 cup unsweetened cocoa powder
03 - 1 teaspoon baking soda
04 - 1/2 teaspoon salt
05 - 1 cup granulated sugar
06 - 1/2 cup unsalted butter, softened
07 - 1 large egg
08 - 1 cup buttermilk
09 - 1 teaspoon vanilla extract

→ Marshmallow Filling

10 - 1/2 cup unsalted butter, softened
11 - 1 1/4 cups powdered sugar
12 - 1 jar (7 oz) marshmallow creme
13 - 1 teaspoon vanilla extract
14 - Pinch of salt

# How To Make It:

01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well blended.
03 - In a large bowl, beat the butter and sugar until light and fluffy, approximately 2 minutes. Add the egg and beat until fully incorporated.
04 - Mix in the buttermilk and vanilla extract. The batter may appear curdled, which is normal.
05 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
06 - Using a cookie scoop or tablespoon, drop rounds of batter (about 2 tablespoons each) onto the prepared baking sheets, spacing them approximately 2 inches apart.
07 - Bake for 10 to 12 minutes, or until the tops spring back when gently pressed. Cool completely on a wire rack.
08 - Beat the butter until creamy. Add the powdered sugar and beat until smooth. Mix in the marshmallow creme, vanilla, and a pinch of salt until fully combined and fluffy.
09 - Spread or pipe a generous dollop of filling onto the flat side of half the cookies. Top each with another cookie, flat side down, to create sandwiches.
10 - Serve immediately or store in an airtight container for up to 3 days. Whoopie pies freeze well unfilled; thaw and fill before serving.

# Expert Tips:

01 -
  • The cakey chocolate exterior is soft and pillowy, nothing like a crisp cookie
  • That marshmallow filling is like eating a cloud, but better because it is sandwiched between chocolate
  • They are actually portable, unlike so many desserts that need plates and forks
02 -
  • The batter looking curdled after adding buttermilk is completely normal, so do not try to fix it
  • Underbaking slightly is better than overbaking, these should stay soft and cakey
  • The cookies need to be completely cool before filling or the marshmallow will melt into a mess
03 -
  • Use a cookie scoop for uniform size, ensuring even baking and picture perfect sandwiches
  • Room temperature ingredients are non negotiable for proper texture in both cookies and filling
